1 tsp of ground cumin powder
2 cups (40cl) of full-fat coconut milk
1 inch piece of fresh ginger (peeled and finely grated)
A tbsp of fresh cilantro (chopped, plus extra for garnish)
1 pinch of red chili pepper (powdered, for garnish)
Salt and freshly ground black pepper to taste


Instructions

1. Prepare Ingredients: In a large, heavy-bottomed pot or Dutch oven, combine the peeled and sliced purple carrots, sliced onion, sliced garlic, ground cumin, chopped fresh cilantro, and a teaspoon of coarse salt.
