Why You’ll Fall in Love with Miso Scallops
There’s something inherently luxurious about homemade scallops, yet they are incredibly straightforward to prepare. This makes them an ideal choice for a special stay-at-home date night or simply a treat for yourself after a long week. Beyond their delightful taste and elegant presentation, scallops are also a fantastic sustainable seafood option, allowing you to enjoy your meal with complete peace of mind.
Our Japanese Miso Scallops deliver a robust flavor profile, where the natural sweetness of the scallops is perfectly enhanced by the savory, slightly salty notes of miso. The texture is just right – tender and juicy on the inside with a beautiful golden sear on the outside. And what about those “leek noodles”? Yes, you read that correctly! We’re talking about 100% vegetable noodles, completely grain-free and gluten-free. Just fresh, vibrant leeks thinly sliced to resemble tagliatelle, offering a delightful bite and a healthy foundation for this exquisite dish. It’s a wonderfully balanced meal, packed with essential nutrients, making it both delicious and good for you.

The Magic of Miso
Miso, a traditional Japanese seasoning produced by fermenting soybeans with salt and kōji (a fungus), is the secret ingredient that elevates these scallops from good to unforgettable. Its unique umami flavor adds incredible depth and savoriness that complements seafood beautifully. There are various types of miso, from lighter, sweeter shiro (white) miso to darker, richer aka (red) miso. For this recipe, a white or yellow miso cube or paste works wonderfully, offering a balanced flavor that doesn’t overpower the delicate scallops. Beyond its fantastic taste, miso is also known for its probiotic benefits, supporting gut health, and is a good source of vitamins and minerals. It’s a powerhouse ingredient that brings both flavor and nourishment to your table.
Leek Noodles: A Healthy and Flavorful Twist
Moving beyond traditional pasta, these leek noodles offer a wonderfully fresh and healthy alternative. Made simply by slicing fresh leeks into thin, ribbon-like strands, they provide a mild oniony flavor and a satisfying texture that perfectly cradles the seared scallops. This innovative approach not only makes the dish gluten-free and low-carb but also significantly boosts its vegetable content. Leeks themselves are packed with vitamins A, C, and K, as well as essential minerals and dietary fiber. Cooking them gently in a flavorful miso broth softens them to perfection while allowing them to absorb all the delicious notes of the sauce, creating a truly harmonious accompaniment.
A Culinary Adventure from Paris to Japan
One of our most cherished spots in Paris is rue Saint Anne, a charming street nestled in the second arrondissement that comes alive with the aromas and sights of Japan. It’s a haven brimming with authentic Japanese restaurants and grocery stores, a place we frequent to gather all our essential Japanese ingredients. From convenient miso cubes and high-quality soy sauce to mirin wine for cooking and vibrant matcha, rue Saint Anne is our go-to for bringing a touch of Japan into our kitchen.
You can often find us strolling from our neighborhood in the 9th arrondissement towards rue Saint Anne, with our beloved little yorkies, Violette and Chou Chou, leading the way. They’ve made the trip so often they practically know the route by heart! This tradition of seeking out specific ingredients and exploring different cultures through food is something we truly treasure. It’s these small adventures that inspire us to create dishes like these Japanese Miso Scallops, blending our love for global flavors with the comfort of home cooking.
We adore easy seafood recipes that feel both special and effortless. For us, a romantic evening at home is perfectly complete with a plate of these delicious Japanese scallops, a crisp bottle of white wine, and perhaps a romantic mini cheesecake for two to finish. It’s a wonderful way to show affection and create lasting memories through the simple act of cooking and sharing a meal. What does your ideal romantic dinner look like?
Prepare to be absolutely wowed by how straightforward these scallops are to make, how incredibly juicy they turn out, and how deeply you’ll appreciate the rich Japanese miso flavor. This dish is designed to impress without the stress, making gourmet dining accessible to everyone.

Tips for Perfectly Cooked Scallops
Achieving perfectly seared scallops is easier than you think. The key is to start with dry scallops – pat them thoroughly with paper towels before cooking to ensure a beautiful crust forms. A hot pan with a good amount of olive oil (or butter, if you prefer) is crucial. Cook them for just about a minute on each side, until they develop a golden-brown sear and are opaque throughout. Overcooking is the cardinal sin with scallops, as it turns them rubbery. You want them tender and sweet.
A quick note on scallop preparation: in France, scallops are often served with the coral (or roe) still attached. In many parts of the States, however, it’s typically removed. Personally, I’m not a huge fan of the coral, but Hugo loves it (and happily enjoys my portion!), so the choice is entirely yours. If you prefer a cleaner, sweeter scallop taste, simply remove the coral before cooking. It’s an easy step that can be done with a small knife or your fingers.

Description
These Japanese Miso Scallops with Leek Noodles are a truly simple yet incredibly flavorful dinner, packed with nutrients and ready in just 30 minutes! Perfect for a special occasion or a quick weeknight meal.
Ingredients
Scale
- 6 large sea scallops, pat dry
- 3 medium leeks, white and light green parts only, washed thoroughly
- 1 tsp fennel seeds
- 1/2 tsp chili flakes (adjust to taste)
- Salt and freshly ground black pepper to taste
- 1.5 cups of water
- 1 miso cube (or 1-2 tablespoons white miso paste)
- 1 tsp sesame seeds, for garnish
- 20 small squares of nori (1/2 inch each), for garnish
- Olive oil, for cooking
Instructions
- Begin by preparing the leeks. Thoroughly wash them and then cut the white and light green parts into thin strips, resembling tagliatelle pasta.
- In a small saucepan, heat 1.5 cups of water over high heat. Add the miso cube (or miso paste) and stir until it dissolves and the water comes to a boil, creating a flavorful miso soup.
- Reduce the heat to medium-low to keep the miso soup warm and simmering gently.
- Meanwhile, heat a generous drizzle of olive oil in a large frying pan over medium heat.
- Add the prepared leek strips to the hot pan and stir continuously with a wooden spoon to ensure even cooking.
- Season the leeks with a pinch of salt and continue to stir-fry until they begin to soften.
- Pour one ladleful of the simmering miso soup into the pan with the leeks. This will help them cook down and absorb the delicious miso flavor.
- Stir in the fennel seeds and chili flakes (if using) with the leeks. Continue to cook, stirring occasionally.
- Cook the leeks for about 15 minutes, or until they are very tender and most of the liquid has been absorbed. Just before serving, add a grind of fresh black pepper.
- While the leeks are cooking, heat a separate frying pan over medium-high heat with another drizzle of olive oil. Ensure the pan is hot before adding scallops.
- Carefully place the scallops in the hot pan, ensuring they are not overcrowded. Cook for approximately 1 minute on each side, until a golden-brown crust forms and the scallops are opaque throughout.
- Season the cooked scallops with a pinch of salt and pepper.
- To serve, arrange the tender leek noodles on plates. Top with the perfectly seared scallops.
- Spoon a little extra miso soup over the scallops and leeks, then garnish with sesame seeds and nori squares. Serve immediately and enjoy!
