Learn to make the best spiced brownies
Ingredients

- 6 white pepper corns
- 6 baies de rose
- 1 clove
- 2 cardamom pods
- 1 spicy chilli pepper
- 120 g dark chocolate (we used organic dark chocolate – 52 percent
- 50 g dark chocolate for your chocolate chunks (we used “Nestle’s Dessert Corsé” 100 percent beurre de cacao)
- 120 g butter
- 2 eggs
- flour
- a pinch of powdered vanilla
- 150 g brown sugar
- 60 g of moscavado sugar
Instructions
- Use a mortar to crush your spices and put aside for later.
- Pre-heat your oven to 350°.
- Melt the dark chocolate “en bain mairie” using your stove and a large glass bowl or a .
- At the same time, heat the butter in a small casserole until it is slightly browned, also known as “beurre noisette”.
- Add sugar to the melted chocolate and mix until smooth.
- Add a shot of espresso.
- Crack the eggs open in another large bowl. Mix gently to break yolks.
- Add spices to the eggs.
- Move chocolate mixture to your kitchenaid mixer (or other stand mixer).
- Wait for chocolate and butter to cool.
- Add the eggs to the chocolate and mix.
- Add a pinch of vanilla and the (cooled), melted butter to the chocolate mixture.
- Add the flour to the mixture, little by little, and mix completely.
- Prepare your chocolate chunks by cutting the chocolate into pieces using a sharp knife.
- Fill your baking mold with the chocolate mixture. Sprinkle chocolate chunks on top.
- Bake in the oven for 25-30 minutes. You will know your brownies are done when you can poke them and the stick comes out clean!
