Muu Waan Thai sweet pork

Our journey into the captivating world of Asian cuisine began during our unforgettable honeymoon. We embarked on an incredible adventure through Thailand, Cambodia, and Myanmar, and every moment of that trip deepened our love for the continent’s rich cultures and, especially, its food. From bustling street markets overflowing with aromatic spices to intimate cooking classes in tranquil villages, we absorbed an immense amount of culinary knowledge. We were particularly fascinated by the intricate balance of sweet, sour, salty, and spicy flavors that define Thai cooking. Determined to recreate these magical tastes back in our Paris kitchen, we meticulously collected several cookbooks, envisioning countless future Asian cooking escapades.

Among the many inspirations we gathered, the concept of Muu Waan, or Thai sweet pork, stood out. We encountered various renditions of this classic dish, and its simple yet profound deliciousness immediately sparked our creativity. The traditional recipes we initially encountered were often quite straightforward, typically relying on a core combination of soy sauce, sugar, and fish sauce. However, we saw an opportunity to elevate and personalize this beloved dish, making it truly our own.

Our first significant modification was substituting white sugar with golden honey. This change not only introduced a more complex, nuanced sweetness but also added a beautiful depth of flavor that sugar alone couldn’t achieve. Beyond that, we decided to enhance the umami profile and richness by incorporating both oyster sauce and a touch of tamarind paste alongside the essential fish sauce. Oyster sauce brings a savory sweetness and glossy texture, while tamarind paste introduces a subtle tang that perfectly balances the sweetness, creating a more sophisticated and layered taste experience.

Another key adaptation involved the cut of pork. While many traditional Muu Waan recipes often utilize fattier cuts like pork shoulder, neck, or belly for their succulent texture, we opted for pork tenderloin. This leaner cut offers a more delicate texture and significantly reduces the fat content, making the dish lighter yet still incredibly flavorful and tender when prepared correctly. This adjustment allows the delicate balance of the marinade to truly shine through, without being overwhelmed by excessive richness. These thoughtful tweaks culminated in a Muu Waan recipe that we believe captures the spirit of Thailand while adding our signature touch.
