  • 120g of whole wheat flour
  • 1/2 cup (approximately 120g) pumpkin puree (not pumpkin pie filling)
  • 1 tbsp high-quality honey (we used Spotted Gum Honey from Knobel Honey)
  • 140g light brown sugar, packed
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp fine sea salt
  • 1/2 tsp baking powder
  • Powdered sugar for dusting (optional, for serving).


Instructions

  1. Prepare Oven & Pan: Preheat your oven to 350°F (176°C). Lightly butter and flour your madeleine molds, or spray with non-stick baking spray, ensuring every crevice is coated. If using silicone molds, buttering might be sufficient.
  2. Make Beurre Noisette (Brown Butter): In a small, light-colored saucepan or casserole, melt the unsalted butter over medium heat. Continue to cook, swirling occasionally, until the butter turns a golden brown, smells nutty, and small brown flecks appear at the bottom. Be careful not to burn it. Immediately remove from heat and set aside to cool slightly.
  3. Combine Dry Ingredients: In a medium bowl, whisk together the whole wheat flour, ground ginger, nutmeg, cinnamon, cloves, salt, and baking powder. Set aside.
  4. Whisk Wet Ingredients: In a large mixing bowl, using either a stand mixer fitted with a whisk attachment or a hand mixer, whisk the eggs, brown sugar, and honey together on medium speed.
