Description

This tasty fish pasta with cod, tuna pastrami and tomatoes is inspired by the gorgeous Tuscan seafood dishes we love.


Ingredients


Scale
  • 1/2 lbs of pasta (preferably wholewheat)
  • 1/2 lbs of cod (cut into 1cm x 1cm cubes)
  • 1/2 tsp of chili flakes (adjust to taste)
  • 1 clove of garlic (finely sliced)
  • 2 tbsp + 2 tsp of fresh parsley (chopped, for cooking and garnish)
  • Juice of a half lemon
  • 4 slices of tuna pastrami (cut into 1 cm pieces)
  • 4 cherry tomatoes (halved or quartered)
  • Olive oil (extra virgin recommended)
  • Salt and freshly ground black pepper (to taste)


Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente, usually about 1 minute less than suggested.
  2. Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the pasta and set aside.
  3. Meanwhile, heat 2 tablespoons of olive oil in a large frying pan or skillet over medium heat.
  4. Add the chili flakes, finely sliced garlic, and 2 tablespoons of chopped parsley to the pan. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Reduce the heat slightly to medium-low.
  6. Carefully add the cubed cod to the pan. Pour in 3 tablespoons of the reserved pasta water, a pinch of salt, a grind of black pepper, and the lemon juice. Cook the cod for about 1 minute per side, gently flipping once, until it’s just cooked through and flaky.
  7. Gently remove the cooked cod from the pan and set it aside on a plate.
  8. Add the drained pasta to the same frying pan. Increase the heat back to medium and cook, stirring, for about 1 minute, allowing the pasta to absorb some of the pan’s flavors.
  9. Return the cod to the pan with the pasta. Add the sliced tuna pastrami and the halved cherry tomatoes. Toss everything together gently.
