Our inspiration for this charming cheesecake sprang from a truly enchanting romantic weekend in Reims, the heart of France’s prestigious Champagne region. Every moment in Reims was a delight, filled with the effervescence of local Champagne, the awe-inspiring grandeur of its historic cathedral, and delightful strolls through charming boutiques where we even found ourselves browsing for unique cookie cutters. Beyond the iconic bubbly, we savored the rich local cuisine, including the famous lentillons de la Champagne, a flavorful lentil dish that perfectly captures the region’s culinary soul. A highlight of our trip was a visit to the renowned Maison Fossier, where we had the privilege of witnessing the fascinating process of how these iconic pink biscuits are crafted. This immersive experience sparked a creative flame, leading directly to the development of this very special cheesecake.
The Enduring Legacy of Biscuits Roses de Reims
The story behind these legendary Biscuits Roses de Reims is as rich and captivating as their flavor. Originating in the late 17th century, around the 1690s, the initial recipe was meticulously crafted by a visionary woman who began baking and selling these delightful pink confections from a charming house nestled in the very heart of Reims. Her artisanal creation quickly gained renown, establishing the biscuit as a local delicacy. Remarkably, the original building where these iconic biscuits first saw the light of day still graces the city center, a silent testament to centuries of culinary heritage. While modern production of these famed pink biscuits has since expanded and moved slightly beyond the immediate city center to accommodate larger scale demand, the spirit and tradition of the original recipe endure.
These unique biscuits are characterized by their signature pink color, achieved through natural carmine, and their distinctively dry, crunchy texture. Traditionally, they are designed to be dipped, famously into a glass of Champagne – their dryness perfectly absorbing the bubbly without crumbling, creating a delightful textural contrast. This historical context and unique characteristic make them a perfect foundation for our Biscuits Roses de Reims cheesecake, where their flavor and color can truly shine. They offer a subtle sweetness and a beautiful visual appeal that instantly elevates any dessert.
Reims: A City of History, Champagne, and Culinary Inspiration
Our visit to Reims truly solidified its place as one of France’s most enchanting destinations. Beyond its reputation as the capital of Champagne, Reims is a city steeped in profound history and breathtaking beauty. The magnificent Notre-Dame de Reims Cathedral stands as an architectural marvel, its intricate Gothic details whispering tales of centuries past. It’s a place where history comes alive, notably as the traditional site for the coronation of many French kings, imbuing it with an unparalleled regal aura. The city’s historical significance extends to its motor racing heritage, having hosted the prestigious French Grand Prix no less than 14 times, a testament to its vibrant past.
Our time there was nothing short of magical—wandering through its elegant streets, exploring its hidden gems, and soaking in the unique ambiance that blends historical grandeur with contemporary French charm. It was indeed the perfect romantic weekend getaway, a journey that ignited not just our wanderlust, but also a deep culinary inspiration that we were eager to bring back to our kitchen. From the sparkling wines to the delicious local produce, Reims offered a feast for all senses, laying the groundwork for many future culinary adventures, including this very **pink biscuit cheesecake**.
Bringing Reims Home: The Birth of a Pink Cheesecake
Leaving Reims, we carried not just cherished memories but a profound sense of culinary inspiration. We were incredibly excited to return home and integrate the unique local food products we discovered in Reims into our everyday home cooking. The undeniable star of our culinary musings, however, was the iconic Biscuits Roses de Reims. From the very first moment Hugo laid eyes on those striking pink biscuits during our enchanting weekend escape, his mind began to conjure a vision: a beautiful, delectable pink cheesecake. The idea was so compelling that the moment we boarded the train for our journey back from Reims, Hugo was already immersed in the creative process, meticulously developing what would become this very Biscuits Roses de Reims cheesecake recipe!

The challenge was to capture the essence of the biscuit’s unique flavor and color in a creamy, delightful form, resulting in this charming and elegant creation.
The Charm of a No-Bake Cheesecake: A Panna Cotta-Like Delight
This particular Biscuits Roses de Reims cheesecake stands out as a delightful **no-bake cheesecake**, achieving its exquisite firm texture through the skillful use of gelatin. The world of cheesecakes often presents a delicious dilemma: are you on ‘Team Baked’ or ‘Team No-Bake’? Truthfully, we adore both for their distinct characteristics. While we cherish our go-to baked cheesecake recipe (which we promise to share with you soon!), there’s a special place in our hearts for the ease and unique qualities of this **no-bake version**. The absence of oven time means this cheesecake sets beautifully in the refrigerator, imparting a wonderfully smooth and almost **panna cotta-like consistency** to the cream cheese filling. This unique, velvety texture is a key differentiator and adds an unexpected layer of sophistication and lightness, making this recipe truly special and distinct from its baked counterparts.
It’s an elegant dessert that proves you don’t always need an oven to create something truly spectacular. The gentle setting process allows the delicate flavors of the lemon, vanilla, and of course, the **pink biscuits**, to meld perfectly without the intensity of baking. This results in a refreshing and utterly satisfying dessert experience, perfect for any season or occasion where a lighter, yet decadent, finish is desired. The **no-bake method** also simplifies the preparation, making it accessible even for novice bakers looking to impress.
Elegant Toppings and Serving Suggestions
To elevate the presentation and enhance the experience of this exquisite Biscuits Roses de Reims cheesecake, we lovingly garnished ours with extra pink biscuits broken into delightful, rustic chunks. These add a wonderful textural contrast and reinforce the core flavor profile. For an added touch of French flair and vibrant color, we included a charming mini raspberry macaron, also sourced from the illustrious Fossier collection, perched elegantly on top. This not only complements the delicate pink hues of the cheesecake but also introduces another layer of classic French patisserie.
Consider serving this magnificent dessert with a delicate dusting of powdered sugar, a few fresh raspberries, or even a light drizzle of raspberry coulis for an extra burst of fruitiness. The beauty of this cheesecake lies in its versatility for presentation; whether kept simple or adorned with additional flourishes, it promises to be a show-stopping centerpiece. Pair it with a glass of crisp Champagne or a delicate sparkling rosé wine to complete the authentic Reims experience, or simply enjoy it with your favorite coffee or tea. - 25g of brown sugar
- 5cl of water
- 1/4 tsp of vanilla powder
Instructions
- Preheat oven to 350°F (175°C) for the crust.
- Melt the butter in a small pan until it boils, then remove from heat.
- Add the powdered biscuits roses to the melted butter and stir well to combine.
- Press the biscuits roses mixture firmly into the bottom of a mini rectangular cake mold (or a springform pan for a larger cake). Ensure the mold is placed on a Silpat or parchment paper if it’s bottomless.

- In a small saucepan, heat the water, brown sugar, and lemon juice over high heat until the mixture comes to a boil.
