1 large egg, at room temperature and preferably organic
1/2 cup of all-purpose flour
1/2 cup of whole wheat flour
1 ½ teaspoons of baking powder
1/2 cup of smooth date paste (store-bought or homemade from ~20 medium dates)


Instructions

1. Gently heat the salted butter in a medium saucepan over low heat until it completely melts. Be careful not to brown it. Remove from heat and allow it to cool slightly, but keep it liquid.

2. In the bowl of your stand mixer, fitted with the paddle attachment, combine the cane sugar and brown sugar. Mix briefly to combine.

3. Pour the slightly cooled, melted butter into the sugar mixture. Beat on medium speed until the mixture is light and creamy, about 2-3 minutes. Scrape down the sides of the bowl as needed.

4. Add the egg to the creamed butter and sugar. Mix for about one minute until fully incorporated and the mixture is smooth.
