Description
Learn to make our favorite spinach and cheese Palak Paneer, a truly delightful and wholesome Indian curry.
Ingredients

- 300g of fresh spinach
- 100g of laughing cow cheese, another soft cheese, or paneer
- 1 red onion (peeled and sliced)
- 1 garlic clove (peeled and finely chopped)
- 2 ripe tomatoes (diced) or 150g of tomato sauce
- 1 tsp of garam masala
- 1 tsp of paprika
- 1 tsp of turmeric
- 1 inch of fresh ginger (peeled and grated)
- 1 fresh chili pepper (finely chopped)
- Olive oil
- Salt and pepper to taste
Instructions
- Remove the tough stems from the fresh spinach.
- Heat a generous drizzle of olive oil in a large casserole or heavy-bottomed pot over medium heat.
- Add the sliced red onion along with a pinch of salt. Sauté for about 2 minutes until it begins to soften.
- Stir in the paprika, turmeric, garam masala, grated ginger, finely chopped chili pepper, and minced garlic. Cook for an additional 4 minutes, allowing the spices to bloom and release their aromatic oils.
- Gradually add the spinach in three batches. Allow each batch to wilt and reduce in volume before adding the next, ensuring it all fits comfortably in the pot. Stir occasionally until all the spinach is wilted and tender.
- Gently fold in the paneer (or soft cheese replacement) and cook for another 2 minutes, allowing it to heat through and meld with the spinach.
- Add the diced fresh tomatoes (or tomato sauce) to the pot. Stir well, then cover and let it simmer on low heat for 15 minutes to allow all the flavors to deepen and combine beautifully. Season with salt and pepper to your preference.
- Serve this creamy Punjabi Palak Paneer hot, accompanied by steamed Basmati rice and our homemade cheese naan for a complete and satisfying meal.
