  • 1 large stalk of celery, peeled and chopped
  • 1 clove of garlic, minced (or 2 small cloves for more flavor)
  • 1 tsp of cumin powder, freshly ground if possible
  • 2 cups (approx. 40cl) of full-fat coconut milk (from a can, shaken well)
  • 1 inch of fresh ginger, peeled and grated
  • 1 small red chili pepper, thinly sliced (remove seeds for less heat)
  • A tbsp of fresh cilantro, finely chopped, plus extra for garnish
  • Coarse sea salt and freshly ground black pepper, to taste


Instructions

  1. Begin by placing the peeled and sliced carrots, chopped celery, minced garlic, cumin powder, and a teaspoon of coarse sea salt into a large, sturdy pot.
  2. Pour enough cold water into the pot to fully cover all the vegetables. Ensure they are submerged to cook evenly.
  3. Bring the mixture to a boil over high heat, then reduce the heat to a simmer and cook for approximately 30 minutes, or until the carrots are fork-tender.
  4. Once the vegetables are tender, carefully remove the pot from the heat source.
  5. Stir in the full-fat coconut milk, ensuring it is well incorporated into the softened vegetables and cooking liquid.
  6. Add the grated fresh ginger and about half a teaspoon of freshly ground black pepper. Adjust pepper to your taste preference.
  7. Using an immersion blender, carefully blend the soup directly in the pot until it achieves a wonderfully smooth and creamy consistency. If you don’t have an immersion blender, transfer the soup in batches to a regular blender, blend until smooth, and then return it to the pot.
  8. Return the pot to the stove and gently heat the soup until it just begins to boil, then remove immediately. Do not boil vigorously.
  9. Ladle the hot soup into individual bowls. Garnish generously with thinly sliced spicy red pepper and fresh chopped cilantro before serving to enhance both flavor and presentation.
