Description

Learn to make this easy, healthy and delicious French sweet potato tart!


Ingredients


Scale
  • 1 big sweet potato (cubed)
  • 2 leeks (sliced)
  • 1 yellow onion (thinly sliced)
  • 1 clove of garlic
  • 1 cup of grated emmental cheese (or your favorite cheese)
  • 1 puff pastry
  • Salt and pepper to taste
  • Olive oil
  • 1 tsp Herbes de Provence


Instructions

  1. Cut the sweet potato into 1/2 inch cubes.
  2. Heat the olive oil in a frying pan on medium heat.
  3. Add the sweet potato cubes.
  4. Add salt, pepper and herbs.
  5. Cook for 15-20 minutes or until you poke a fork into the sweet potato.
  6. Put the sweet potato cubes in a bowl aside.
  7. Preheat the oven to 360°F (180°C).
  8. Meanwhile, add another dash of olive oil to the frying pan.
  9. Add the sliced onion.
  10. Add salt.
  11. Cook on medium heat for 4 – 5 minutes or until the onions are transluscent.
  12. Add the leeks.
  13. Add a little more salt, pepper and herbs.
  14. Leave to cook for another 5 minutes.
  15. Remove from heat and put aside.
  16. Line a tart or quiche mold with the puff pastry.
  17. Place baking beans on the puff pastry to keep it from rising in the oven.
  18. Put in the oven and bake for 10 minutes.
  19. Remove the puff pastry from the oven and remove the baking beans.
  20. Fill the pastry with the sweet potato cubes, leeks and onions.
  21. Add a little bit of olive oil and the grated cheese.
  22. Bake for 10 minutes or until the puff pastry is cooked through and the cheese is melted.
  23. Serve with green salad (our favorite is arugula!).
