- 1 medium spaghetti squash
- For the Arugula Pesto:
- 100g (about 4 cups) fresh arugula
- 50g (about 1/4 cup) pumpkin seeds
- 3 cloves of garlic, peeled
- Salt and freshly ground black pepper, to taste
- 2/3 cup extra virgin olive oil
- For serving: Parmesan, cheddar, or Emmental cheese, grated (optional)
Instructions
- Thoroughly wash the spaghetti squash under cold water. Place it whole (unpeeled) into a large, tall pan or pot. Fill the pot with enough cold water to fully submerge the squash, and add a generous handful of salt.
- Bring the water to a boil over high heat.
- Once the water is bubbling rapidly, reduce the heat to medium and allow the squash to cook for approximately 20-30 minutes, or until you can easily pierce the skin and flesh with a fork. Cooking time may vary depending on the size of your squash.
- While the squash is cooking, prepare your arugula pesto. In a food processor or using a hand mixer, combine the fresh arugula, pumpkin seeds, peeled garlic cloves, olive oil, salt, and pepper. Blend until smooth and well combined. Adjust seasoning to your preference.
- Carefully remove the cooked spaghetti squash from the hot water and let it cool for a few minutes until it’s safe to handle.
- Using a heavy-duty knife, carefully cut the squash in half lengthwise. Scoop out and discard the seeds and any stringy bits from the center.
- Using a fork, gently scrape the cooked flesh from the inside of each squash half. It will naturally separate into spaghetti-like strands.
- Heat a large frying pan or skillet over high heat with a drizzle of olive oil. Add the spaghetti squash noodles to the hot pan.
