1 red bell pepper (chopped)
1/2 red chili pepper (sliced, optional for heat)
1 cup of high-quality tomato sauce (passata)
1 tbsp of pine nuts
200g of Mezze Maniche pasta
1 tbsp of fresh cilantro (chopped)
Olive oil
Salt and freshly ground black pepper to taste

1. In a high-speed blender, combine the raw cashew nuts with a pinch of salt. Blend until completely smooth and creamy, like butter (this typically takes about 10-15 minutes, depending on your blender). Set aside.

2. Bring a large pot of salted water to a boil. Add the Mezze Maniche pasta and cook for one minute less than the package instructions. The pasta will finish cooking in the sauce. Drain, reserving about 1/2 cup of pasta water.

3. Meanwhile, heat one tablespoon of olive oil in a large frying pan or skillet over medium heat.
