  • 1/4 tsp of chili pepper (adjust to taste)
  • 3 pods of green cardamom
  • 4 whole cloves
  • 1 tsp of cumin seeds (or ground cumin)
  • 10 white peppercorns
  • 5 black peppercorns
  • 10 small potatoes (or 2-3 medium, cut into cubes)
  • 1/2 head of cauliflower
  • 1 cup of tomato sauce (passata or crushed tomatoes)
  • 1 onion, chopped
  • 2 cloves of fresh garlic, minced
  • 1/4 tsp of garlic powder
  • 1/4 cup of fresh coriander (cilantro), chopped
  • Salt & black pepper to taste
  • Olive oil (or ghee)

Instructions

  1. In a large casserole or heavy-bottomed pot, heat a generous amount of olive oil over low heat.
  2. Add the whole or halved small potatoes (leaving the skin on for extra nutrition and texture). Sprinkle with a pinch of salt and black pepper, then cook gently until they begin to soften, approximately 30 minutes, stirring occasionally.
  3. Meanwhile, in a dry frying pan, heat the black peppercorns, white peppercorns, cardamom pods, and cloves over medium heat for about 2 minutes, until fragrant. Be careful not to burn them.
  4. Remove the toasted spices from heat, transfer them to a mortar, and crush them into a fine powder. Alternatively, use a spice grinder.
  5. In a small bowl, combine the freshly ground spice mixture with paprika, turmeric, chili pepper, cumin, and garlic powder.
  6. In a separate pan, heat a bit more olive oil over medium heat.
  7. Add the chopped onion and minced fresh garlic, cooking for about 5 minutes until the onion is translucent and fragrant.
  8. Stir in the mixed spices from step 5 and cook for another 2 minutes, allowing the spices to bloom and release their aromas.
  9. Reduce the heat to low.
  10. Pour in the tomato sauce and let it simmer for about 5 minutes, allowing the flavors to meld beautifully. Set this spicy tomato mixture aside.
  11. Cut the cauliflower into bite-sized florets.
  12. Heat 3 cups of water in a large pot until boiling.
  13. Add a teaspoon of salt to the boiling water.
  14. Add the cauliflower florets to the salted boiling water and cook for just 2 minutes. This brief blanching ensures the cauliflower is tender-crisp, not soggy.
  15. Immediately remove the cauliflower from the heat and drain it thoroughly.
  16. Once the potatoes are softened (from step 2), you can cut them in half if they were whole, or leave them as is if they were already cubed.
  17. In a large pot or the casserole with the potatoes, heat 2 tablespoons of olive oil over medium heat.
  18. Add the cooked potatoes, blanched cauliflower, the spicy tomato sauce, and half of the fresh coriander. Gently toss to combine, ensuring all vegetables are coated.
  19. Cook for another 5 minutes, allowing the flavors to fully integrate and the vegetables to warm through.
  20. Before serving, sprinkle generously with the remaining fresh (raw) coriander for a burst of freshness and color. Serve hot with rice or naan.
