- Salt, pepper & Piment d’Espelette spicy red pepper to taste
- 2 tsp olive oil
- 1 cup rocket lettuce (for serving)

- Lightly sauté the thickly sliced zucchini in a large frying pan with the olive oil for 2-3 minutes. This helps to soften the zucchini and reduce excess moisture. Set aside.
