For our picnics, we love to use our favorite picnic basket – the one that came with charming mini wine glasses, which, admittedly, won us over instantly – alongside our practical bento boxes to transport our culinary treats with ease and style.

Paris, with its endless charming parks and scenic riverside spots, is an ideal city for a picnic. Our absolute favorite location for an outdoor feast is on the Ile Saint Louis. There, nestled by the Seine, is a particularly gorgeous weeping willow tree and a picturesque Parisian ‘place’ that holds immense sentimental value for us. It was in this very special spot that we chose to take some of our engagement and wedding photos, making every picnic there a cherished memory. This salad, enjoyed in such a beautiful setting, truly enhances the experience.

  • 3 tomatoes (cut into 8 parts)

  • 1 bay leaf
  • 1 sprig of rosemary
  • Vinaigrette
  • Salt and black pepper


Instructions

  1. Wash the lentils thoroughly under cold running water. This removes any debris and helps prevent clumping.
  2. Pour the washed lentils into a large pot and add approximately 2 liters of fresh water.
  3. Place the pot on high heat and bring the water to a rolling boil.
  4. Once the water is boiling rapidly, reduce the heat to low, ensuring a gentle simmer. Add a pinch of salt, a dash of black pepper, the bay leaf, and the sprig of rosemary to infuse flavor into the lentils.
  5. Continue to simmer the lentils gently until they are cooked al dente – firm to the bite but not hard, and not mushy. This usually takes between 50 minutes and 1 hour, depending on the type of lentil and desired tenderness.
  6. Once cooked, drain the lentils thoroughly using a fine-mesh sieve. Set them aside to cool to room temperature. This is crucial for a great salad texture.
  7. In a large mixing bowl, combine the cooled lentils with the finely sliced yellow onion, the fresh tomatoes cut into 8 parts, the diced red beets, the crumbled goat cheese, the vinaigrette, a generous sprinkle of Herbes de Provence, and the finely chopped pickled spicy red peppers.
