- 1/2 cup of toasted sesame seeds (for homemade tahini) OR 1/2 cup ready-made tahini
- 1/4 cup of olive oil + extra to drizzle
- 1 large clove of garlic, minced
- 1 tsp ground cumin
- 1/4 tsp spicy pepper (like cayenne or red pepper flakes), adjust to taste
- 2 pinches of salt, or to taste
- A generous sprinkle of black pepper
- Juice of 1/2 a fresh lemon
- A sprinkle of sweet paprika to serve.
Instructions
- Preheat your oven to 350°F/180°C.
- Carefully cut the eggplant in half lengthwise.
- Using a fork, poke several holes all over the skin of each eggplant half. This allows steam to escape during roasting.
- Place the eggplant halves, cut-side up, in a rectangular baking dish or on a baking sheet lined with parchment paper.
- Generously drizzle the cut side of the eggplant with olive oil. You want enough to coat the surface well.
- Roast in the preheated oven, skin side up, for 15 minutes.
- Flip the eggplant halves over so the skin side is down, and grill for another 15 minutes, or until the flesh is very tender and slightly caramelized, and the skin is charred.
- Meanwhile, prepare your tahini (if making from scratch): Mix the toasted sesame seeds and 1/4 cup of olive oil together using a hand mixer or food processor until it becomes a smooth paste. If using pre-made tahini, simply measure out 1/2 cup.
- Take the roasted eggplant out of the oven and let it cool for approximately 15-20 minutes. This allows the flesh to firm up slightly and makes it easier to scoop.
- Once cooled enough to handle, scoop out the tender inside flesh of the eggplant and transfer it to a bowl. Discard the skin. Mix the eggplant flesh with the prepared tahini using your hand mixer or a fork until well combined.
- Add the minced garlic, ground cumin, spicy pepper, salt, and black pepper. Squeeze in the fresh lemon juice.
